# 47: Victorian Sponge Cake (twisted)



"The Great British Bake Off" is simply amazing and so inspiring. Gosh! I couldn't resist trying out the classic Victoria Sponge Cake.

This is how it turned out! ;)





The little twist I added was to doing a full butter icing all round the cake and sprinkling a few decorations! While reducing the filling a bit to suit my family's taste..

# 46: Salmon Courgette Delight!



Going bonkers over my new found love for courgettes aka zucchini :)

With just a few ingredients I possibly made myself a simple yet amazing meal.. here's to my salmon courgette delight :

Ingredients:

  1. Salmon fillet- 1
  2. Courgette -1 
  3. Carrot-1
  4. Mushrooms (handful)
  5. Roasted Peanuts (handful) 
  6. Salt to taste
  7. Vegetable oil -  1/2 tsp
  8. Pepper to sprinkle!
Preparation: 


Marinate the salmon fillet with lemon juice and a pinch of salt. Leave it to rest for a bit.

Chop the vegetables (courgette, carrots, & mushrooms).  My preference would be courgette cubes, carrots discs and mushrooms in halves!

Heat half a teaspoon of oil in a pan, add the carrots, courgettes and stir. It will soften up within 2 minutes then add the mushrooms and stir well. Add salt to taste and garnish with pepper and peanuts. (P.S: I personally like to have that crunch when in my stir fried veggies so totally depends how long you would want to cook the vegetables!)

With the Salmon, you can either grill it or pan fry it. I chose to pan fry it to a nice golden brown tinge! Salmon by itself leaves a lot of oil so honestly,  I didn't have to use any oil to fry it.


And..... 

Oh! a little addition and cheat treat to my already yummy meal was a hash-brown! :D

The Big Change (2015) & Happy Mother's Day!

3 months into 2015 and everyday I see myself as a new person.

Every year has taught me a great deal but none like 2015 (so far!)

And when I say, there has been a big change .. I mean it in a holistic way! Not only have I become even more organised  (OCD! as per my husband and friends ;) )and time sensitive but seems like I have finally come to terms with being a home-maker and  a working professional ;)

Its funny indeed! I was living in denial for the first year for sure and am amused at myself now.. However, now that I have come to terms with the new chapters that are unfolding before me, I should share my experiences with food and switching roles from a house-wife to ops professional and vice versa. 

I started sharing my experiences and journey with food a few years back as a dedication to my MUM for her unconditional love and dedication for our family, her never-ending love to cook and serve, and her magical way of introducing me to food and to be her little 'chef and self'! <3

Coming back to share my experiences yet again with a promise to spread her culinary love, I'd like to wish all the MOTHER'S a very happy mother's day and to my mum.

MA, I love you.. and thank you for being MY mom.
